  Quick Beef Stroganoff

Subscriber Jodi really, really likes this recipe that she sent to me to share with you. I know that because she followed the statement, "My family's favorite" with 18 exclamations points. That's a rousing endorsement in punctuation, I'd say. Jodi says she's made the recipe many times and always to a great reception.

Quick Beef Stroganoff
 
1 pound round steak sliced diagonally as thin as
     possible into 1/8 by 2" strips
1/4 cup margarine or butter (1/2 stick or 4 
     tablespoons)
1/2 cup chopped onion
4 ounces canned, sliced mushrooms, drained
1 can condensed beef broth
1 cup dairy sour cream
2 1/2 tablespoons flour
Hot buttered noodles or rice to serve

Trim fat from meat. Cut into strips diagonally across the grain. Brown meat and onions quickly in margarine or butter in large skillet. Push meat to one side of skillet and add mushrooms. Cook 1 minute.

Add broth and heat just to boiling. Reduce heat. Blend sour cream and flour together in separate bowl. Gradually blend sour cream/flour mixture into skillet, stirring until mixture thickens. Do not let mixture come to a boil.

Season to taste. Serve over hot buttered noodles or rice. Makes 4 servings.

 
  Tip of the day.
When a stove-top savory recipe, such as today's stroganoff, calls for sour cream, it's best to cook it gently after the addition or the mixture could curdle or separate. Do not heat to more than a simmer. Do not boil!
