  Dottie's Chicken a la King

Easy Meals subscriber Jodi shares this recipe for Chicken a la King that she got from a neighbor 41 years ago when she was a newlywed. After all these years, it's still a favorite. It calls for cooked chicken so you could cube the breast meat and add a bit of the dark meat of a rotisserie chicken for your 2 1/2 cups of meat.

Dottie's Chicken a la King
1/3 cup butter melted
2 tablespoon chopped green pepper
1 cup sliced mushrooms
3 tablespoons flour
2 cups milk
1/4 teaspoon salt
Freshly ground black pepper
2 1/2 cups cooked and seasoned chicken cubed in 
    1/2-inch cubes
1 beaten egg yolk
2 tablespoon finely chopped pimento, optional

Simmer butter with green pepper and mushrooms, until peppers are slightly softened. Add flour and stir until blended. Add milk slowly, stirring until blended and thickened. Add seasonings and chicken. Cook over low heat, stirring until it just starts to bubble. Do not let it come to a full, roiling boil. 

Add beaten egg yolk and pimento. Stir 2 more minutes.

Serve on biscuits or hot buttered rice.

Serves 6.

 
  Tip of the day.
A rotisserie chicken, or home-roasted chicken, yields about 4 cups of meat, both white and dark.
